Galette des Rois Recipe with Cœur de Vanille

A Taste of History…
The galette des rois has its origins in the Roman festival of Saturnalia, during which a hidden bean would designate a king for the day. Later adopted by the Christian tradition for Epiphany, the cake evolved over the centuries—from regional brioche-style versions to the flaky puff pastry with frangipane that is emblematic of northern France. Today, it continues to reinvent itself with refined ingredients such as Bourbon vanilla to delight even the most discerning palates.
Ingredients for Homemade Puff Pastry
Beurre Manié :
- 375g dry butter
- 150g strong flour
- 350g flour
- 8g salt
- 150g water
- 113g melted butter
- 2g vinegar
- 3g Cœur de Vanille Bouquet
Ingredients for Almond Cream
- 135g almond flower
- 109g butter
- 82g eggs
- 14g cornstarch
- 21g rum
- 108g granulated sugar
- 1g Cœur de Vanille Bourbon
- 232g pastry cream (with 2g Cœur de Vanille Bourbon)
Preparation Steps
1. Puff Pastry Preparation
- Beurre Manié: Mix dry butter and flour until smooth. Chill.
- Détrempe: Melt the butter, add Cœur de Vanille Bouquet and let infuse. Cool, then combine with flour, salt, water, vinegar, and vanilla to form a smooth dough.
- Turns and Resting: Roll out the détrempe, incorporate the beurre manié, and perform 6 turns (3 double turns), refrigerating between each.
2. Almond Cream Preparation
- Beat the butter and sugar until creamy.
- Add eggs, almond powder, cornstarch, and rum. Mix thoroughly.
- Gently fold in cooled pastry cream for a smooth texture.
3. Assembly and Baking
- Shaping: Cut two puff pastry discs. Place the almond cream on the first disc, leaving a 2cm edge. Don’t forget the fève!
- Assembly: Moisten the edges, cover with the second disc, and seal gently. Decorate as desired.
- Rest: Refrigerate the galette for 30 minutes for optimal baking.
- Baking: Preheat the oven to 180°C and bake for 35–40 minutes until golden and crisp.
